Materials and setup

Parent note

Child should do age-appropriate kitchen prep under supervision — washing, tearing, measuring at all ages; cutting with supervision from Kinder up; stove use only with parent. Some purple foods (eggplant, purple cabbage) are acquired tastes — offer in mild preparations first.

Pre-K (ages 3–4)

Count colors on your plate tonight! The more colors, the more vitamins. Try to find 3.

Difficulty 1 of 3

Steps

  1. At dinnertime, look at your plate. Say out loud every color you see.
  2. Count: 'One yellow (corn), two green (broccoli), three orange (carrot)!' Goal: 3 colors.
  3. Parent explains simply: 'Every color is a different vitamin. Red tomatoes, green broccoli, yellow corn — all different helpers for your body.'
  4. Pick a color your plate is MISSING. Ask: 'Can I have something ___?' Try to add it.
  5. Draw tonight's dinner on paper and color it in.
  6. Make it a habit: each dinner this week, count colors. Put a sticker on a chart for every day you get 3+ colors.

Kindergarten (ages 5–6)

Rainbow Plate Challenge: build one meal with 5 different colors. Photograph it and share the rainbow!

Steps

  1. Research together: the 'eat the rainbow' idea says different colors have different nutrients. Red (lycopene, vitamin C), orange/yellow (beta-carotene → vitamin A), green (folate, iron, vitamin K), blue/purple (anthocyanins), white (allicin, quercetin).
  2. Plan a rainbow meal. Goal: 5 colors. Example: red bell pepper, orange carrot, yellow corn, green spinach, purple grapes, white cauliflower.
  3. Shop or gather ingredients with parent. Prepare together — child does the safe steps (washing, tearing lettuce, stirring).
  4. Build the plate. Take a photo from above showing all colors.
  5. Eat the rainbow. Rate each color 1-5 on taste. Any surprise favorites?
  6. Draw a colorful poster: 'My Rainbow Plate' with the 5 foods and 1 nutrient for each.
  7. Extension: repeat twice more this week with different 5-color combinations. Can you do 6? 7?

Early elementary (ages 6–8)

Track colors eaten for a week. Match each color to its top 2 nutrients and identify which ones you're missing.

Steps

  1. Build a Rainbow Log: 7 rows (one per day), 7 columns (red, orange, yellow, green, blue/purple, white, other). Check off every color you eat per day.
  2. Nutrient map: memorize the top nutrients in each color. RED (lycopene — heart health; vitamin C — immunity), ORANGE/YELLOW (beta-carotene → vitamin A — eyes + skin), GREEN (folate — blood cells; vitamin K — clotting; iron — energy), BLUE/PURPLE (anthocyanins — brain + memory), WHITE (allicin — immunity; quercetin — anti-inflammatory).
  3. After 7 days, tally: which color did you eat most? Which did you miss? Blue/purple is commonly underrepresented.
  4. Research which foods are in the color you missed (blueberries, blackberries, purple cabbage, eggplant, plums, purple grapes). Pick 1 to add next week.
  5. Cook something with your missing color. Photograph the process.
  6. Write 3 sentences on what you noticed: favorite color-food, surprise nutrient fact, which color is hardest to get.
  7. Extension: look up 1 food-color scientific study (like 'blueberry consumption and cognitive function'). Summarize in 3 sentences.

Upper elementary (ages 8–10)

Study phytonutrients at a molecular level and design a rainbow meal plan for a specific health goal.

Steps

  1. Research phytonutrients: plant compounds that aren't technically nutrients (no calories, not essential for survival) but have huge health effects. There are 25,000+ known phytonutrients, grouped into families: carotenoids, flavonoids, glucosinolates, phenolic acids, phytosterols.
  2. Deep-dive 5 phytonutrients: lycopene (tomatoes, watermelon — antioxidant, heart health), anthocyanins (berries, purple cabbage — brain, blood vessels), sulforaphane (broccoli, kale — cancer prevention, detox), curcumin (turmeric — anti-inflammatory), quercetin (onions, apples — immune, anti-inflammatory).
  3. Pick a health goal to design for: (a) stronger immunity, (b) better focus/memory, (c) post-workout recovery, (d) gut health. Research which phytonutrients + vitamins target that goal.
  4. Design a 5-day targeted rainbow meal plan. Every meal must include foods matched to your goal. Example for 'focus/memory': include blueberries (anthocyanins), leafy greens (folate), salmon (omega-3), walnuts (ALA omega-3), dark chocolate (flavonoids).
  5. Cook at least 3 dishes from your plan. Photograph each.
  6. Track your goal outcome over 5 days: for focus, time yourself on a math or reading task each afternoon; for recovery, track how sore you feel the day after a workout; for immunity, count minor symptoms (runny nose, tired, etc.).
  7. Write a 2-page report: include the goal, the meal plan, the 5 phytonutrients you targeted (with food sources), your outcome data, and a conclusion on whether targeted eating seemed to help.
  8. Caveat paragraph: 5 days is too short to prove anything scientifically. Real nutrition benefits show over months. What would a longer, more rigorous study look like?
  9. Extension: research 'functional foods' — foods that claim health benefits beyond basic nutrition (probiotic yogurt, fortified cereal, adaptogenic teas). Which claims have strong science, which are marketing?

Completion records that the activity was done; the child’s explanation, work sample, photo, or demonstration is stronger evidence of learning than a completion check alone.
